Ingredients:

  • cooking oil
  • 1 – 2 lb of ground beef
  • 1 can of tomato green chili
  • 3 tbsp taco seasoning
  • 1 1/2 tbsp knorr chicken bouillon
  • 12 corn tortillas
  • 2 cups Mexican red rice
  • 3 cups Mexican cheese blend
  • 1 small can of black beans
  • half of finely chopped iceberg lettuce
  • 16 oz Mexican sour cream
  • pico de gallo
  • hot sauce

Pico de Gallo:

  • 1 large tomato
  • 1/4 onion
  • half a jalapeno
  • small bunch of cilantro
  • lemon juice and salt, to taste

Directions:

Step 1

Heat some cooking oil in your pan over medium heat. Once it’s hot, fry the tortilla on each side for about five seconds. After you fry all the tortillas, set them aside. Next, in the same pan, add the ground beef and season with 3 tbsp of taco seasoning and 1 1/2 tbsp knorr chicken bouillon. Mix and cook the meat thoroughly. Once the meat is fully cooked, add a can of tomato green chili and continue to cook for another four minutes.

Step 2

Now, start layering the casserole. Layer six tortillas at the bottom, overlapping one another. Next, layer the pre-cooked Mexican rice, spreading evenly, then the ground beef mixture. After this, sprinkle the beans all over the top along with the shredded cheese. To finish it off, layer the six remaining tortillas at the top. Place the casserole in a 400 degrees F oven and bake for ten to fifteen minutes. Once done, remove it from the oven, and add a layer of sour cream, shredded lettuce, shredded cheese, pico de Gallo, and drizzle in some hot sauce over the top. Serve and enjoy!
