Dice the onion and jalapeno and mince the garlic cloves. Set them aside. Heat 1 tbsp cooking oil in a large skillet, then add 1 lb ground beef. Break it apart and cook it until brown. Add 1 tbsp flour and a pinch of salt and cook until brown. Remove from the pan once done cooking and set aside. Add another tablespoon of cooking oil in the same skillet over medium heat, then add the diced onion (reserve 1/4 cup for serving), jalapeno pepper, and minced garlic. Season with a pinch of salt. Saute for a minute or two, or until fragrant. After this, add the cooked ground beef back to the pan. Season with 1 tsp cumin, 1 tsp chili powder, and 1/2 tsp dried oregano. Mix well.

Next, add a can of diced tomatoes and 1/4 cup of water. Let it simmer until most liquid evaporates. Once done, transfer it to a mixing bowl. Now, assemble the lasagna. Spread a small amount of the beef mixture to the bottom of the cast-iron skillet (briefly warm corn tortillas in a separate pan), then place a layer of the tortillas over. Spread another layer of beef mixture on top, then some shredded cheese. Repeat the layer of tortillas, beef mixture, then shredded cheese twice. Place the skillet in a 425 degrees F oven and bake for 20 to 25 minutes, or until cheese is melted. Garnish with diced onion, pickled jalapeno, salsa, or crema.
