Brown Gravy and Tomato Base
Step 1
Place a large skillet pan on a stove over medium-high heat, add the oil and butter, and bring them to a sizzle. Season the roast with salt and pepper generously, then place it down on the hot skillet with the seasoned side down, and sprinkle more salt and pepper on top of the roast that has not been seasoned yet.
Step 2
Sear them for about 4 minutes or until browned and the bottom is crusty, then turn the roast over, and sear the other side for 4 more minutes until browned and the bottom is crusty. Turn off the heat and transfer the seared roast to the crockpot, then put the chopped carrots, celery, onions, and potatoes all over the top of the roast.

Step 3
In a medium-sized mixing bowl, pour in the beef broth and water, then add the diced tomatoes, gravy mix, garlic powder, and black pepper, and whisk everything together until combined.
Step 4
Pour in the mixture over the roast and veggies in the crockpot, then put the lid on, and allow it to cook on a low setting for about 8 to 10 hours or a high setting for about 6 to 8 hours. Cook them until the roast is fork tender and the sauce has thickened, then serve, and enjoy!
