Meatloaf
Glaze
Step 1
Place a skillet pan on a stove over low heat, then add some olive oil, and saute the chopped onions for a few seconds until the raw taste is gone. Add some chopped parsley, then keep mixing adding more oil as needed, and season it with salt and pepper to taste. Toss and saute until the onions are translucent, then add the garlic paste, and Worcestershire sauce, and give them a good stir to combine before turning off the heat.
Step 2
In a large mixing bowl, add the ground beef and sausage, then break and mash them together, then add the breadcrumbs a little at a time, and mix them in until evenly combined. Add the remaining chopped parsley, then add in the onion mixture, and mix everything until combined. Add the parmesan cheese, mix, then add the beaten eggs, and keep mixing just until combined.

Step 3
Lay a piece of parchment paper on a flat surface, then weave the bacon strips over it as shown in the video, then transfer the meat mixture to one side nearest to you, and shape it nicely. Grab the end of the paper closest to you, then carefully it over, and reshape making sure to tuck in the edges of the bacon strip.
Step 4
Line a baking tray with aluminum foil, then place a rack on top, and grease it generously with nonstick cooking spray. Place the meatloaf on the rack, then gently remove the paper, and make sure that the ends are nicely tucked and secure. Put it in a preheated oven, then allow it to bake at 375°F for at least 1 hour and 15 minutes or until the meat is thoroughly cooked.
Glaze
Step 1
While waiting for the meat to cook, prepare the glaze in a saucepan over low heat. In the saucepan, add the ketchup and sugar, then stir them consistently until thickened, and then add Worcestershire sauce and Dijon mustard.
Step 2
Keep stirring until incorporated, then turn off the heat, and use some of it to glaze the meatloaf once done cooking. Serve the meatloaf with the remaining glaze on the side, and enjoy!
