Do you love eating potatoes? If you do, Cooking Lee’s easy crispy potato cubes will surely be your next favorite snack! This will definitely change the way you cook your potatoes. It’s like eating fries, but made so much better. It’s incredibly crispy and delicious! I made this at home and everyone can’t stop talking about them. It was gone in just a few minutes, and everybody kept on telling me to make another batch. It surely is a crowd favorite.

You really don’t need a lot of ingredients to make these potato cubes. You only need potatoes, cornstarch, cooking oil, and cheese powder. The dried scallions are optional. Of course, if you don’t like cheese, you can try barbecue, sour cream, ranch, or your favorite flavor. Serve this during movie nights, snack time, or at parties at home.

Fill a pot with water and place over heat. Let it come to a boil.
While waiting for the water to boil, peel the potatoes, then slice the outside edge of each piece. Cut into small bars, then into cubes.
Put the cubed potatoes in boiling water and boil for 15 minutes.
Once it’s almost done cooking, fill a bowl with cold water. Strain the cubed potatoes and put them in the cold water immediately to stop the cooking process.
Take out the potatoes and let them dry.
Place them in a plastic bag then add 2 tablespoons of cornstarch. Twist the end and shake the potatoes well to coat.
Heat a generous amount of oil in a pan. Once hot, carefully add the coated potatoes. Spread them evenly and fry for about 8 minutes. Once done, remove from the oil and strain the excess oil. Let them cool for about 15 minutes.
Once cooled, heat the oil again and put back the potatoes. Fry for about 3 minutes. Strain then put the potatoes in a bowl.
Sprinkle dried scallions and 1 tablespoon of cheese powder. Shake evenly. Serve and enjoy!
