Ingredients:

  • 10 oz hash browns
  • 5 large eggs
  • 1 cup Mexican cheese, divided
  • 1/8 cup chopped red bell pepper
  • 1/8 cup chopped yellow bell pepper
  • 1/4 cup green bell pepper
  • 1/2 cup milk
  • 6 slices of cooked bacon, chopped
  • 1 tsp salt, divided
  • 1/2  tsp ground black pepper, divided
  • 1 tbsp olive oil
  • 1/4 cup fresh chopped parsley

Directions:

Step 1

Preheat your oven to 400 degrees F. Combine 10 oz hash browns, 1/2 cup of shredded Mexican cheese, 1/2 tsp salt, 1/8 tsp ground black pepper, one egg, and 1 tbsp olive oil in a large mixing bowl. Mix well until combined. Next, grease your muffin pan with nonstick cooking spray, and divide the hash brown mixture into each cup, pressing them down to the bottom. Place them in the preheated oven and bake them for ten to fifteen minutes or until crispy. In the meantime, prepare the other ingredients.

Crack the remaining four eggs in a mixing bowl and whisk them. Next, add the remaining half of the shredded cheese, salt, and ground black pepper, then add the chopped cooked bacon, green onions, diced yellow and red bell peppers, and 1/2 cup milk. Mix well together. Once your muffins are done, divide the egg mixture into each cup. Season to taste and sprinkle with freshly chopped parsley. Put them back in the oven and bake for another ten to fifteen minutes. After baking, let them cool down for five minutes, then remove them from the pan. Serve and enjoy!
