To start, prep and chop all the ingredients and set them aside. Next, add the chopped Medjool dates and apricots to a large mixing bowl along with 1/4 cup currants, 1/3 cup golden raisins, 1 cup dried cranberries, and 1/3 cup finely chopped crystallized ginger. After this, pour 3 tbsp whiskey, mix, and let it sit for a few minutes. Next, add the juice and zest of one large orange and 10 tbsp of melted butter. Mix well, then add one beaten egg, 1/2 cup heavy cream, and 3/4 cup buttermilk. Mix well.

Now, season with 1/2 tsp kosher salt, then add 1 1/4 cups roughly chopped pecans, 1/2 cup dry bread crumbs, and 1 1/4 cups all-purpose flour. Mix well until you form a thick batter. Once done, transfer the batter to a butter-greased heat-proof bowl. Press the batter down and smoothen out the top. Cover the top of the pudding with a circle-shaped parchment paper touching the surface, then stretch two pieces of cling wrap over the bowl. After this, place the bowl over a third piece of cling wrap, then bring the ends up over. Now, place over two pieces of aluminum foil, then secure everything by tying a string tight.
Refrigerate the pudding overnight for best results. When ready to cook, place four sprigs of rosemary at the bottom of a large pot, then lay the bowl over the top. Gently pour water halfway up, then cover the pot with its lid. Turn the heat to high, and once it starts boiling, turn the heat to medium and cook it for four hours covered. After this, remove all the cover, place a bowl on top, then carefully turn it over. Lastly, brush the pudding with some maple syrup. Serve and enjoy!
