Pie Filling:
Add 1 1/4 cups of all-purpose flour, 1/2 tsp kosher salt, and one stick of cold and cubed unsalted butter in your food processor. Give it a pulse until the butter turns into pea sizes. Next, add 1/3 cup of ice water while pulsing continuously. Once done, remove the dough from the processor, wrap it with plastic wrap, and let it rest in the fridge for an hour. In the meantime, make the lemon buttermilk filling.

Add 1 1/2 cups granulated sugar, 1 1/4 cups buttermilk, 1/2 cup of melted unsalted butter, and 1/4 cup lemon juice in a mixing bowl. Mix well. Next, add four eggs and yolk, 1 tbsp lemon zest, 1 tsp vanilla extract, and 1/2 tsp kosher salt. Mix well, then fold in 1/4 cup all-purpose flour. Set it aside.
Back to the pie crust, transfer it to a floured surface, and roll it until it’s a little bigger than your pie dish. Once done, tuck it into your pie dish, crimping the edges in. After this, pour in the custard mixture, then place it in the preheated 350 degrees F oven, and bake it for an hour. Serve and enjoy!
