Add 2 tablespoons of salted butter and 2 tablespoons of vegetable oil in a cast iron skillet. Melt in the oven preheated to 350F. Set aside.
In a large bowl, add 1 1/2 cups of yellow cornmeal, 1 cup of all-purpose flour, 3 1/2 teaspoons of baking powder, and a pinch of salt. Whisk all ingredients together.
You can add 1/4 cup of granulated sugar, if you do only add 2/3 cup of whole buttermilk. If you are not going to add sugar, add 2 cups of whole buttermilk. Next, add 2 large eggs. Whisk until well combined. Next, add a dollop of Duke’s mayonnaise. Mix again.
Pour the melted butter and oil into the batter. Whisk until well combined.
Pour it back into the skillet. Place inside the oven and bake at 350F for 18 to 20 minutes. Make sure to keep an eye on it.
While it’s baking, make the honey butter. In a small bowl, add 1 stick of softened salted butter, 1 heaping tablespoon of honey, and 1 teaspoon of heavy cream. Mix until well combined.
Remove your cornbread from the oven once baking, and spread a tablespoon of honey butter mixture on top. Place back in the oven and brown the top by broiling for 2 to 3 minutes. Do not walk away! Keep an eye on it.
Slice and serve with the honey-butter mixture. Enjoy!
