To start, heat some cooking oil in a large pot. Once heated, add the chopped beef along with ground oregano, beef seasoning, minced garlic, some soy sauce, and salt to taste. Mix well and cook the beef for about two minutes covered. Next, add two red chili peppers, diced carrots, and diced red onions. Mix well and let it cook for another two minutes. After two minutes, stir in 2 tbsp tomato paste, then add the freshly smashed tomatoes.

Add a little bit of water, cover the pot, and let it simmer for about five minutes. After this, add the chopped potatoes. Mix well, cover the pot, and let everything simmer over low heat for 25 minutes. (Stir it occasionally to make sure the potatoes are not sticking at the bottom.) Now, three minutes before removing it from the heat, add the freshly chopped scallions and mix everything up. Serve and enjoy!
