Start by peeling the skin of the potatoes, then cut them into big long chunks around 0.4 inches in thickness.
Get one of the potato chunks and two long sticks. Place the two long sticks on the side. Thinly and evenly slice the potato chunks. The sticks will keep you from cutting the potatoes all the way through.
Flip the potato with the sticks still on the sides. Cut potato chunks diagonally at a 45-degree angle thinly and evenly.
Carefully insert the stick into the middle of the potato chunk you just cut. Gently spread the potato. Let the potatoes soak in normal water for 30 minutes to remove excess starch.
After 30 minutes, drain the water well.
Add corn flour and season with salt and pepper on a plate. Mix well.
Coat the potatoes with the cornstarch on all sides.
Place a large pan over heat and add a generous amount of oil. Once hot, add the coated potatoes and fry until golden brown and crispy. Make sure to turn them so they will fry evenly.
Serve with your favorite sauce. Enjoy!
