This Chipotle chicken copycat recipe by CookingwithChris tastes so much like Chipotle’s or much even better! It has way more flavor than the original and is absolutely delicious. You will never buy from the stores again once you try this recipe. It’s super easy to make – I’m sure you’ll cook it again and again.

In a blender, add 1 teaspoon of cumin powder, 4 garlic cloves, 1 teaspoon of dried oregano, 2 teaspoons of kosher salt, 1 teaspoon of black pepper, 1 tablespoon of chili powder, 2 tablespoons of olive oil or sunflower oil, 4 chipotle peppers from the can (disregard all the remaining peppers) and all the adobo sauce. Lastly, add 3/4 cup of water. Blend everything at a slow or medium speed for 2 to 2 minutes until well combined.
Add four to six chicken thighs to a gallon or two-gallon ziplock plastic bag. Next, add the marinade to the bag and seal it leaving just a little bit of opening. Remove as much air as possible, then fully close it. Mix to fully coat the chicken. Let it marinate for eight hours or overnight in the fridge.
Place a cast iron skillet over medium to medium-high heat. Once hot, add the marinated chicken. Sprinkle it with kosher salt on top. Cook until it has a nice Dr. Pepper char for about 4 to 5 minutes, then flip it over. Cook the other side for another 3 minutes. The internal temperature should be at least 165F.
Slice the chicken lengthwise, flip them, and cut into 3 to 4-inch cubes. Serve and enjoy!
