To start, peel your potatoes and chop them into chunks. After this, add them to boiling water. Cook them for about 12 minutes. Next, heat your skillet for a minute over medium heat, add 2 tbsp oil, then add the potatoes. Season with 1/2 tsp paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp cumin, 1 tsp ground black pepper, 1 tsp salt, and 1 tsp Mexican oregano. Mix them well, making sure each piece is coated with the seasonings properly, then add some butter. Cook them for five to six minutes.

Next, make the enchilada sauce. Place your pot over medium heat and add 1 1/2 tbsp oil. After 30 seconds, add 3 tbsp guajillo chile powder. Mix it for 30 seconds, then add 1 1/2 cups of water, 2 tbsp tomato sauce, and 1/2 tbsp chicken bouillon. Continue to cook the sauce for another eight to ten minutes.
For the omelet, drizzle some cooking oil into your pan over medium heat, then add your three large beaten eggs. Turn down your heat to medium-low, cover the pan with its lid, and continue to cook the eggs for a minute. Add shredded cheese over, then fold the omelet. Turn off the heat, place the lid back on, and let the cheese melt for 30 seconds. Now, start plating the breakfast recipe and serve.
