In a large pot over medium-high heat, add 1 tbsp olive oil and 2 tbsp butter. Add the chopped chicken and sear them for three to four minutes. After this, add the diced onions, and continue to cook for another two minutes. Next, add five cups of water followed by the chopped sweet potatoes, black beans, corn, red bell peppers, garlic, 3 tbsp chicken bouillon, 1 tsp ground black pepper, 1 tsp Mexican oregano, and 1/2 tsp nutmeg. Place the lid over the pot and cook for 15 to 20 minutes.
