Heat 2 teaspoons of oil in a pan over medium-high heat. Once hot, add the onion and saute for a couple of minutes. Next, add the hatch green chiles and tomatoes and cook for a minute.
Add the ground beef, minced garlic cloves, oregano, chili powder, garlic powder, onion powder, black pepper, cumin, and salt to taste. Break the meat and cook for 7 to 8 minutes. Make a taste test and adjust seasonings if needed.
Make the jalapeno dip. In a blender, add cream cheese, sour cream, pickled jalapeno juice, and pickled jalapeno. Blend until smooth and transfer to a bowl.
Preheat the oven to 350F.
