Into a bowl, add 1/3 cup extra-virgin olive oil, 1/4 cup lemon juice, four cloves of minced garlic, 1 tbsp dried oregano, 2 tsp dried thyme, 2 tsp Dijon mustard, 2 tsp kosher salt, and 1 tsp freshly ground black pepper. Mix until well combined, then set it aside. Now, transfer the chicken thighs in a large bowl and drizzle in the dressing.

Toss around the chicken thighs, making sure each piece is coated well with the dressing. After this, place it in the fridge and let the chicken thighs marinate for at least an hour. Once done, place the chicken thighs in a casserole dish side by side and pour the leftover marinade on top. Put them in the oven at 350 degrees F for 40 to 45 minutes.
