I have made a lot of pineapple upside-down cake before but I haven’t tried cooking it in a frying pan yet, so when I saw this recipe version by How Tasty on YouToube, I already knew that I had to try recreating it at home to see if it’s just as tasty as the baked ones. I’m glad that I tried this recipe, this method is more convenient and easier, especially for those who don’t own an oven. Try it out now, you’ll love it for sure!
Step 1
Place a non-stick frying pan on a stove over low heat, then add the butter to the pan, and let it melt before tilting the pan so that the bottom and sides are covered and greased well. Add the sugar, then let it cook until it has completely dissolved and caramelized, turn off the heat, and remove the pan. Cut the pineapple slices in half and leave one whole, then assemble them in the pan with the caramel sauce along with the cherries as shown in the video, and set the pan aside.

Step 2
In a large mixing bowl, whisk together the eggs and sugar until well combined and the top is slightly foamy, then add the vegetable oil and pineapple juice from the canned pineapple, and continue to whisk them until incorporated. Sift together the flour, baking powder, and baking soda over the mixture, then give them a good whisk until combined making sure to not overmix, and then pour the batter over the pineapple slices in the pan. Place the pan back on the stove over medium-low heat, then cover the pan with the lid, and allow it to cook for about 15 minutes.
Step 3
Once the top is dry but very soft and a toothpick inserted at the center comes out clean, turn off the heat and remove the pan from the stove, then leave it covered for about 5 minutes, and then remove the lid. Let it cool down for at least 15 minutes, then pour 2 tablespoons of pineapple juice on the cake, and brush it all over to spread the juice evenly. Slide a spatula around the side of the cake to unmold it from the pan, then flip it over upside down using a serving plate, and serve. Enjoy!
