Preheat the oven to 325F.
Lay the shrimp in a paper towel and pat them dry. Season them with cajun seasoning and a little bit of paprika.
Place a pan or skillet over heat and add 2 tablespoons of butter. Once melted, add the seasoned shrimp and par-cook it over medium-high heat for just 2 minutes. Put in a paper towel then strain. Slice into small pieces.
Add the softened cream cheese, chopped green onions, bacon bits, gouda cheese, parmesan, lemon juice, crab meat, and shrimp to a bowl. Mix until well combined.
Take your salmon fillet and pat it dry. Place it on a skillet or microwave-safe dish, then put the stuffing on top. Take another fillet and place it on top. Season with pepper then spread butter.
Place in a preheated oven and bake for about 15 to 17 minutes depending on the size of the fillets. For medium well, it will take about 12 to 15 minutes, and for well done, about 15 to 17 minutes.
Remove from oven, sprinkle with a little bit of lemon juice. Serve and enjoy!
