Everyone in your family will be delighted when they see this chicken salad recipe by The Stay At Home Chef at the dinner table! It has these vibrant colors that are so appetizing to look at. The dressing, on the other hand, is amazing. The homemade sauce makes all the flavors pop. I was surprised when I first tried this appetizer – the taste and crunch from each bite were just perfect. For the dressing:

Prepare the dressing. Combine 1/4 cup of soy sauce, 1/4 cup of rice wine vinegar, 2 tablespoons of toasted sesame oil, 2 cloves of crushed garlic, 2 teaspoons of minced ginger, 1 teaspoon of sugar, and 1 teaspoon of pepper in a small bowl. Whisk everything until well combined.
Combine 4 cups of thinly sliced Napa cabbage, 1 cup of shredded carrots, 1/2 cup of sliced green onions, and 2 cups of cooked chicken in a large mixing bowl.
Add 1 cup of drained mandarin oranges and 1/4 cup of chopped cilantro to the bowl. Mix all ingredients.
Drizzle the dressing over the salad. Toss until all ingredients are well coated.
Add won ton strips or chow mein noodles and sesame seeds on top before serving. Enjoy!
