Looking for a new snack to make at home? Try this super crispy cube potato pizza by 쿠킹하루 Cooking Haru 🙂. Each piece is filled with bacon slices, tomato sauce, mashed potato, and cheese. It turned out so good – I couldn’t count how many pieces I ate in just one sitting. I highly recommend this if you’re a pizza lover like me.

Cut the loaf bread into thick slices, then into cubes.
Cut the inside of the cube, then press to make space in the middle using the handle of a wooden spoon. Repeat with the other cubes. If your bread is soft enough, you can cut the middle.
Peel the potatoes and cut them into cubes. Place them in a heat-proof bowl with 2 tablespoons of water. Cover with the lid and cook in the microwave for about 2.5 to 3.5 minutes. Mix it halfway through to make sure everything is cooked evenly.
Drain the leftover water. Gently poke the potatoes with a stick to check if it’s cooked. Season with 1/2 teaspoon of salt, black pepper, 2 tablespoons of milk, and parsley. Mash everything until well combined. You can add more milk if needed.
Slice the bacon into small pieces then place in a bowl. Add 3 tablespoons of tomato sauce and mix well.
Add mashed potatoes to each cube, then press to make them flat. Next, add the tomato bacon and flatten. Top it with mozzarella cheese. Press down the cheese to fill the space. Sprinkle a little parsley on top if preferred.
Place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 370F for about 10 minutes.
