When it comes to cakes, my go-to flavor is a classic upside-down cake with lots of pineapples and cherries, you can just never go wrong with this cake! You can serve it on special occasions, gatherings, parties, or even on an ordinary day. This cake is super easy to prepare and requires only a few simple ingredients, plus, this can be ready in just less than an hour. Ingredients:

  • 1 stick of butter
  • ½ cup of brown sugar
  • Maraschino cherries
  • 1 (20-ounce) can of sliced pineapples, reserve the juice
  • 3 eggs
  • 1/3 cup of milk
  • 1/3 cup of oil
  • 1 yellow cake mix
  • 1 (3.5-ounce) box vanilla instant pudding 3.5 oz
  • Nonstick cooking spray

Directions:

Step 1

Slice the pineapples in half and reserve the juice for later, then generously grease the sides and bottom of the bundt cake pan with nonstick cooking spray, and pour the melted butter at the bottom. Sprinkle the brown sugar and distribute it evenly at the bottom, then place the halved pineapple slices and cherries alternately as shown in the video, and set it aside while preparing the batter. In a large mixing bowl, add the yellow cake mix and vanilla instant pudding, then whisk them until combined and incorporated.

Step 2

Add the eggs, reserved pineapple juice, milk, and oil, then whisk them until incorporated, and make sure to scrape the bottom well. Pour the batter into the prepared pan, then spread it evenly, and place it in the preheated oven to bake at 350 degrees for about 30 to 45 minutes or until a toothpick inserted at the center comes out clean and the top is nice and golden brown. Scrape the sides to make sure it will unmold nicely later, then allow it to cool down for about 10 minutes, and unmold it upside down on a plate. Serve and enjoy!
