A few weeks ago, I was looking for a new recipe that I can try and share with my family, and there were a lot of delicious dishes on the internet, but what stood out to me was this one-pan meal idea by Cooking With Claudia on YouTube. It was so easy to make and it has both of my favorites in one pan, which are chicken, potatoes, and cheese! It was as good in person as it looks in the video and my family loved it so much that they asked me to make it often. Try this at home too and you surely won’t regret it.
Creamy Sauce
Step 1
In a small mixing bowl, add the salt, pepper, thyme, basil, oregano, parsley, rosemary, and paprika, then mix them together until uniform and well combined, and season the chicken thighs and both sides until well coated. Place a pan on a stove over medium heat, then heat up some oil, and sear the chicken for about 3 to 4 minutes on each side until nice and golden brown. Remove the chicken from the pan, then set it aside for later, and in the same pan, add the potatoes. Season them with salt and pepper, then saute them for about 8 minutes while stirring occasionally until nice and golden brown.

Step 2
While waiting for the potatoes to cook, place a separate pan on a stove over medium heat, then melt some butter, and add the onions sauteeing it for about 4 minutes until nice and lightly caramelized. Add the garlic, then give it a good stir, and cook for about 30 seconds until fragrant. Now, add the flour, then let it cook for 1 minute before pouring the chicken broth, and give it a good stir until well combined.
Step 3
Once the sauce has thickened, add the milk, heavy cream, parmesan cheese, chicken bouillon cube, and freshly chopped parsley, then stir them all together, and let it cook for about 1 minute. After the potatoes are done cooking, place the seared chicken thighs on top, then pour the creamy sauce all over them, and place the pan inside a preheated oven at 400°F or 204°C to bake for about 35 to 40 minutes. Once done baking, let it side for about 10 minutes, then serve, and enjoy!
