Here’s an easy almond flour pancake recipe by Clean & Delicious on Youtube for you. It’s super fluffy and sweet, just like your regular pancakes, but healthier! What I love about this recipe is that it’s grain-free, gluten-free, and high in protein. Plus, it’s low in carbs. Get a large bowl, add 1 cup of super fine almond flour, 2 tablespoons of tapioca starch, 1 teaspoon of baking powder, and a pinch of kosher salt. Gently mix all ingredients well using a fork.
In a different bowl, mix 1/3 cup of almond milk, 1 egg, 1 tablespoon of sugar-free maple syrup, and 1 teaspoon of vanilla extract.
Combine the wet and dry ingredients. Gently stir until well incorporated.
Place a non-stick skillet over medium heat, and grease with butter or coconut oil. Scoop 1/4 cup of pancake batter and pour into the skillet to form a small to medium-sized pancake. Cook it for about 2 to 3 minutes or until the edges begin to puff and the bottom turns golden brown. Flip to the other side and cook for another 2 minutes or until cooked through. Repeat the process for the remaining batter. Serve and enjoy!
