Thoroughly wash the potatoes, then cut each potato in half lengthwise. Place them flat on the board and make diagonal cuts with the same size. Make them just slightly thick because if they are too thick, they won’t cook quickly. Put them in a large bowl.
First, pour half a cup of olive oil into a small bowl. Next, add a tablespoon of dried garlic powder, a tablespoon of mixed fried, a tablespoon of smoked paprika, a teaspoon of salt, and a little bit of freshly grated black pepper. Add 1/2 cup of parmesan cheese if preferred. Mix everything until well combined with a spoon.
Pour the mixture into the potato wedges. Toss them with your hands until they are fully coated with the sauce.
Line a baking tray with parchment paper, then place the potato wedges in a single layer. The skin side of the potatoes must face down. This makes the cooking much more even.
Place the potato wedges in a preheated oven at 392 degrees F for about 45 to 50 minutes or until they are cooked all the way through and they are crispy and golden brown on the outside. To test if they are done, prick them with a fork to check if they are nice and soft. Serve with a dipping sauce like sour cream, barbecue sauce, or sweet chili sauce.
