Creamy yogurt dip
Step 1
Remove both ends of the eggplant, then slice it into ¾-inch circles, and chop each circle into ½-inch strips. Lay them in a tray or sheet in a single layer, then sprinkle some salt all over them, and leave them for about 20 minutes to drain off excess water or moisture. While waiting for the eggplants to dry, prepare the batter, in a large mixing bowl, add the eggs, salt, pepper, and paprika to taste, then whisk them together until well combined, and add the wheat flour in two additions making to mix well in between. Continue whisking until thick and smooth, then check the eggplants, and pat them dry with a paper towel. Transfer the dry eggplants to a separate large mixing bowl, then pour the prepared batter over them, and toss or massage to coat the eggplants with the batter completely

Step 2
Place a deep pan on a stove over medium to medium-high heat, then let it heat up, and start frying the eggplants in batches to not overcrowd the pan. Let the eggplants cook until nice and golden brown on both sides while turning them occasionally, then transfer them to a plate lined with paper towels to drain off excess oil, and fry the next batch. Prepare the matching dip in a small mixing bowl, simply mix together the yogurt and mayonnaise until well combined, then add the salt, pepper, and chopped parsley, and continue to mix until incorporated and combined. Garnish the dip with more parsley, then serve on the side of the eggplant fried, and enjoy!
