Peel all potatoes and cut them into wedges. Put them in a bowl. Boil some hot water, then pour on the potatoes. Add 1 tablespoon of salt and mix. Let it soak for about 20 minutes.
Strain the potatoes from the salt water mixture and place them on a paper towel on your countertop. Get another paper towel and dry them.
Get a clean plastic bag or resealable plastic bag. Place the potatoes inside the bag and pour 2 tablespoons of olive oil. Shake to coat the potatoes well.
Add grated parmesan cheese, 2 tablespoons of cornstarch or potato starch, 1/2 tablespoon of oregano, 1 teaspoon of red pepper powder, a little bit of salt, and 1 teaspoon of minced garlic in a small bowl. Mix all ingredients well, then add them to the potatoes inside the plastic. Shake well until the potatoes are fully coated. Next, add the breadcrumbs. Shake gently so that the seasoning won’t fall off.
Place the wedges on a baking tray lined with parchment paper. Bake them in a 365 degrees F preheated oven for about 40 to 50 minutes.
Add the cheese sauce ingredients to a microwavable bowl and place in the microwave for 30 seconds. Once melted, mix well.
Transfer the wedges to your serving plate and serve with the cheese sauce while still hot and crispy. Enjoy!
