Almonds have a nutty and toasty taste that people love. As for me, I like them in chocolates. I think they are just simply the best! The sweetness from the chocolate and the nutty flavor and crunch from the almonds are just addicting. I can finish a lot in just one sitting. Ingredients:
- 4 eggs
- 1 cup of sugar
- 1 and 1/3 cup of almond flour
- 1 teaspoon of almond extract
- powdered sugar (optional)
Note: If you want some extra flavor, you can add orange or lemon zest

Instructions:
Step 1:
Preheat the oven to 350 degrees F.
Step 2:
In a big bowl, crack 4 eggs. Next, add 1 cup of sugar and 1 teaspoon of almond extract. Beat the ingredients with a hand mixer until the consistency becomes light and fluffy. Do not overbeat the mixture.
Step 3:
Once you have the right consistency, add 1 and 1/3 cup of almond flour into the bowl. Mix all ingredients until well combined using a spatula.
Step 4:
Line your 8-inch round pan with parchment paper and grease the sides and bottom using butter or oil.
Step 5:
Pour the mixture into the round pan and place in the preheated oven at 350 degrees F. Bake for about 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
Step 6:
After 35 or 40 minutes, remove the almond cake from the oven and let it cool completely. Once cooled, remove from the pan and transfer to a plate.
Step 7:
Sift some powdered sugar on top of the almond cake. You can skip this part if you don’t like it to be too sweet. Slice then serve. Enjoy!
