In a large mixing bowl, make the batter. Add 2 eggs, mayonnaise, all-purpose flour, salt and black pepper, fresh lemon zest, and fresh dill or parsley into the bowl. Mix all ingredients well until the batter becomes smooth.
Add the shredded chicken and shredded mozzarella cheese to the mixture. Stir until well combined and the chicken is fully coated with the batter.
Cover the mixture with plastic wrap and place it in the refrigerator. Refrigerate for at least 30 minutes.
Once cooled, portion it using an ice cream scoop. You will get 12-15 patties in total.
Put panko bread crumbs in a bowl and roll each ball into the breadcrumbs. Press them gently to make 1/2-inch thick patties. This will make a crisp exterior for your patties.
Place a large nonstick skillet over medium heat. Pour a tablespoon of olive oil and start frying the chicken cake in a single layer. Do not overcrowd the skillet. Saute for about 3 to 4 minutes per side or until golden brown on each side. Add more oil if needed.
Once cooked, transfer to a plate and continue cooking the remaining batches. Sprinkle a little bit of salt after you transfer them to a plate and squeeze some lemon juice on top. That’s it. Serve and enjoy!
