Step 1
First, after cleaning and washing the beef, pat it dry, then season it with salt, pepper, smoked paprika, onion powder, and garlic powder to taste. Gently rub and massage the seasonings to the beef, then flip it over to the fatty side, and season it as well. Place a pan on a stove over medium-high heat, then heat up some oil and add the beef searing it on all sides. Once done seeing the beef, remove it from the pan, then set it aside, and use the same pan to cook the chopped onions until it turns translucent. Turn off the heat, then transfer the cooked onions to the bottom of a baking dish or dutch oven. Add the seared beef on top of the cooked onions, then add some baby carrots, potatoes, and other veggies you want around the beef, and pour in about 1½ cups of beef broth.

Step 2
Cover the baking dish with a sheet of aluminum foil, then put it in a preheated oven at 300°F or 150°C, and let it bake for about 2 hours. After 2 hours, remove the foil, then remove the beef as well, and let it rest for about 30 minutes to 1 hour while preparing the gravy. Place a pan on the stove over medium heat, then add the sauce of the beef, and season it with about 1 to 2 teaspoons or to taste Worcestershire, ground black pepper, and a pinch of salt. Whisk them all together until well combined, then bring it to a boil, and add about 1½ tablespoon of cornstarch diluted in 1½ tablespoon of water. Whisk them consistently until the gravy thickens, then turn off the heat, and pour this over the sliced brisket with the veggies around the side. Serve and enjoy!
