Easy Mexican Wedding Cookies Ingredients

  • 2 cups of all-purpose flour
  • 2 sticks of salted butter
  • 2/3 cup and 1 cup of confectioners sugar (powdered sugar)
  • 1 teaspoon of vanilla
  • 1 teaspoon of ground cinnamon
  • 1 1/4 cup of pecan halves  (chopped, you can toast them if you want)

How to Make Snowball Cookies

Step 1:

Chop the pecans in a food processor, then preheat your oven to 350F.

Step 2:

In a mixing bowl, add 2 sticks of butter, 2/3 cups of powdered sugar, and 1 teaspoon of vanilla. Mix everything with a spatula. You can use a stand mixer if preferred.

Step 3:

Add the chopped pecans and 1 teaspoon of ground cinnamon. Mix well. Next, gradually add 2 cups of all-purpose while mixing. Bring them together with a spatula.

Step 4:

Using your hands, bring everything together and form into a ball.

Line a cookie sheet with parchment paper. Make the dough into small balls and place them on the prepared cookie sheets. Give them an inch of space. Make sure everything is the same size.

Step 6:

Bake inside the 350F preheated oven for 17 minutes or until golden brown on the bottom.

Step 7:

Once done baking, let them cool down. Once cooled, place on a zip lock bag and add 1 cup of powdered sugar. Close the bag and shake to coat.
