Ingredients:

  • 1 1/2 lb salmon fillet,, cut into 4 fillets
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp extra light olive oil (or vegetable oil)
  • 2 tbsp fresh lemon juice
  • 3 cloves of minced garlic
  • 1/2 tbsp Dijon mustard
  • 1/2 tsp fine sea salt
  • 1/8 tsp ground black pepper
  • 1/2 lemon, sliced into 4 rings (for garnish)

Directions:

Step 1

Preheat the oven to 450 degrees F and line a baking sheet with parchment paper. Lay the salmon on the lined baking sheet, skin side down, and set them aside. In a mixing bowl, add the finely chopped parsley, 3 cloves of minced garlic, 2 tbsp extra light olive oil, 2 tbsp fresh lemon juice, 1/2 tbsp Dijon mustard, 1/2 tsp fine sea salt, and 1/8 tsp ground black pepper. Stir them together using a fork until combined.

Step 2
