Ingredients:

  • 1/4 cup jasmine rice, washed and cooked
  • 1 boneless chicken breast, chopped into bite-size
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 1 egg
  • 2 tbsp soy sauce
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • salt, to taste

Directions:

Step 1

Washed your rice under cold water for 30 seconds, then add it to a pot followed by 1/2 cup water and a pinch of salt. Place it on the stove over high heat, and as soon it’s boiling, close the lid and let it simmer for 12 to 15 minutes. After the rice is cooked, stir it and let it sit for about a minute or so without the lid on top. Next, add some oil to your pan, then fry the chicken breast strips for 30 to 40 seconds on each side, then remove them from the pan. After this, cut your veggies accordingly, then add them to the same oiled pan over medium heat.

Step 2

Saute the veggies for three to four minutes, then add 1 tsp garlic paste and 1 tsp ginger paste. Mix well, then add the cooked rice. Stir everything and keep frying for another minute or so, then scrape everything to the side. Add another touch of oil and crack an egg. Scramble it inside the pan, then combine everything so the rice gets coated with egg. After 30 seconds, add the frozen peas and keep frying for another 30 seconds. Finally, add a pinch of salt, the chicken strips back in, and pour the sauce. Give it another stir to combine everything, then serve.
