To start, take your chocolate chips and measure them correctly; you’ll need exactly 1 1/3 cups. After this, transfer the chocolate chips into a large heat-safe mixing bowl. Set aside. In a small saucepan, pour 8 oz heavy whipping cream and bring to a simmer over low heat while stirring constantly. Once simmering, remove it from the heat and pour it over the chocolate chips quickly. Swirl the bowl to make sure all of the chocolate chips are covered.
Cover the bowl with plastic wrap and let it rest for five minutes. After this, remove the plastic wrap and start stirring immediately. (Use a spatula instead of a whisk to avoid incorporating too many air bubbles into the ganache.) Once the chocolate chips fully melt and you have a silky smooth texture, you can now use it for your pastry or as a fruit dip.
