Ingredients:

  • 4 medium zucchini
  • 1 cup salsa
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 1 lb grass-fed ground beef
  • 2 tbsp taco seasoning
  • 1 cup cauliflower rice
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 cup chopped zucchini, reserved
  • salt and ground black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro (optional)
  • 1/4 cup diced cherry tomatoes (optional)

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, trim off the top and bottom of the zucchini, lay it down, then slice it in half lengthwise. After this, scoop out the center of the zucchini, leaving about a quarter inch of thickness all around the sides and the bottom. (Set aside the scooped zucchini in a small bowl, don’t throw it away.) Repeat these steps with all of your zucchinis. Next, pour 1 cup of salsa into the bottom of your casserole dish, spreading it evenly. After this, lay down the zucchini, then set them aside.

Step 2

Now, make the filling. In a large skillet over medium-high heat, add 1 tbsp olive oil, then saute 1 cup of chopped onions. Season with a pinch of salt. Once the onions are translucent, push them over one side, then add the meat. Season with a pinch of salt and start breaking it up. Once the meat turn brown, add 2 tbsp taco seasoning and a bit of salt, and ground black pepper, to taste. Mix well. Next, add 1 cup of cauliflower rice, two cloves of minced garlic, one chopped bell pepper, and 1 cup of scooped zucchini from earlier. Mix well to combine. Add a bit of salsa to help everything simmer, then leave it for five to ten minutes until it thickens.

Step 3

Once done, remove from the heat and divide the filling as evenly as possible amongst all the zucchini boats. After this, top each with shredded cheddar cheese. Cover the pan, place them in the preheated oven, and bake for 25 minutes. Serve and enjoy!
