Recently, I found out how much I loved zucchini and I wanted to try out all sorts of new recipes with zucchini in it. I searched the internet and found a few recipes that I thought looked good and tried to make them all. Out of the 5-6 dishes that I made, this recipe for zucchini “meatballs” was by far the best thing I made. It wasn’t only simple to make, but when I popped the first one in my mouth, I found that they tased super good too. I’m going to have to admit that I did eat the entire first batch to myself in the first day that I made them, but when I made the second, I shared them with my co-workers who also loved them too. After they begged me for the recipe, which I was happy to share, they were happy to hear that the zucchini “meatballs” were healthy too. I plan on making this recipe often as it is a new favorite of mine and everyone I shared them with.
Using a large bowl, start by mixing the zucchini, onion, garlic, cheese, eggs, 3/4 cups of bread crumbs, parsley, salt and pepper together with your hands.
Next, make balls with the zucchini mixture about the size of a golf ball. Then, cover the balls in the remaining bread crumbs and add a little mozzarella to the top of each ball.
Lastly, fry for about 5 minutes or until golden brown in the peanut oil.
