This zucchini and cheese breakfast muffin by One day One recipe is the perfect choice for a grab-and-go snack! It’s incredibly moist, fluffy, and savory. Grate the zucchini, then squeeze to remove the juice. Place in a bowl. You can add the juice to a salad recipe.
Beat two eggs in a bowl, then add to the grated zucchini. Next, add 1/4 cup of milk and 1/2 cup and 2 tablespoons of sifted flour. After that, add 2 tablespoons of olive oil, 2 tablespoons of fine wheat, 1 tablespoon of baking powder, 1/4 cup of pecorino cheese, and ground black pepper. Mix everything until well combined with a wooden spoon or spatula.
Grease the muffin tin with butter on all sides, then add 2 tablespoons of the mixture into each cup.
Place the muffin tray inside the oven and bake at 356 degrees Fahrenheit for about 15 to 20 minutes.
Once done baking, remove it from the oven and allow it to cool for a few minutes. Remove the muffins from the pan and place in a cooling rack to completely cool. Serve and enjoy!
