Start by cooking the bacon slices in your cast iron skillet until crispy. Once cooked, transfer to a plate lined with paper towel.
Divide the ground beef into four equal sizes. Form each one into square patties.
Place the patties into your skillet and season with salt and pepper. Cook until browned for about 4 minutes and flip to the other side. Season with salt and pepper, and place cheddar slices on each one. Cook until the cheese is melted and the meat is cooked through.
Make the sauce. In a mixing bowl, combine mayonnaise, relish, ketchup, and mustard. Whisk until well combined. Make a taste test and adjust the amount based on your preference.
Cut the brioche buns in half and spread mayonnaise on each half. Place on your skillet, mayo side down, and toast.
Add cheese slices to the toasted buns, followed by the patty with melted cheese, crispy bacon slices, another patty with melted cheese, and crispy bacon slices again. Spread the sauce on the top bun and place on your burger.
