Add 1 tablespoon of olive oil into a pot, then add the chopped onion, celery stalks, and carrots. Cook on high heat for about 2 minutes.
Season with 1 teaspoon of thyme, salt, and black pepper. Mix well.
Mix in 1 can of rotel tomato and chili, then pour in 4 cups of vegetable stock or chicken bone broth. Cover with the lid and cook for 15 minutes.
Add the zucchini, cover with the lid, and cook for 5 minutes.
Stir in a handful of kale and cook for 2 minutes. After that, it is ready to be served.
