Dyer’s Burgers on Beale Street in Memphis, Tennesse have been in business since 1912, and they have never changed their recipe for their iconic burger. When I found this recipe for this delicious old-style burger by Guga Foods, on YouTube, I had to try it! This lovely vintage hamburger recipe is deep fried in beef tallow because in the old days when the hamburger was first made the owner of Dyer’s did not have a flat griddle so he used his cast-iron skillet to make all the burgers of the day in the skillet. What happened was that the skillet gets full of natural beef tallow, and that is the natural grease that the new burgers are submerged in. I have to say this method of cooking a burger makes the best burger you will ever taste.

  • Ground beef (80% lean works best)
  • A jar of natural beef tallow
  • A cast-iron skillet
  • Cheese slices
  • Onions (sliced)
  • Mustard
  • Pickles (your favorite kind)
  • Hamburger buns
  • Salt and pepper to taste
