Ingredients:
- 7 – 8 large eggs
- 1 1/2 cups milk
- 1/2 tsp baking powder
- kosher salt and black pepper
- 1 tsp dry oregano
- 1 tsp sweet paprika
- 1/4 tsp nutmeg
- 3 slices of toast bread (cut into 1/2 inch pieces)
- 2 shallots (thinly sliced)
- 1 tomato (diced small)
- 3 oz sliced mushrooms (optional)
- 4 oz artichoke hearts from a can (drained and quartered)
- 2 oz pitted kalamata olives (sliced)
- 2 – 3 oz crumbled feta cheese
- 1 oz chopped fresh parsley
- extra virgin olive oil
- 1 bell pepper (round slices)
Directions:
Step 1
In a bowl, crack 7 eggs, then add 1 1/2 cups of milk. Season with some kosher salt and black pepper. To fluff up your egg, add 1/2 tsp of baking powder. Next, add 1 tsp dry oregano, 1 tsp sweet paprika, and 1/4 tsp nutmeg. Whisk it all together. Tear 3 slices of bread into pieces, then add them to the mixture. Next, add 1 diced tomato, 2 thinly sliced shallots, 3 oz sliced mushrooms (optional), 4 oz artichoke hearts, 1 oz chopped fresh parsley, 2 oz pitted sliced kalamata olives, and 2 – 3 oz crumbled feta cheese. After this, mix it all thoroughly and nicely.

Step 2
Add the sliced bell peppers into the mixture. Oil your casserole dish with a good amount of extra virgin olive oil using a brush. Transfer the mixture onto the casserole dish, making sure the bell peppers are on top. Place the casserole in the oven and bake it at 375 degrees F for 30 to 35 minutes. Make sure that the center of the casserole firms up.
