Start by prepping and chopping the veggies accordingly and set them aside. Next, heat 2 tbsp of cooking oil in a pan over medium heat, then add the sliced carrots, cabbage, and bell pepper. Stir-fry for about a minute or until slightly softened. After this, add 5 oz fresh beansprouts and minced garlic. Continue cooking for another minute. Now, add 4 tbsp light soy sauce, 2 tbsp hoisin sauce, and 1/4 tsp white pepper. Stir everything well while adding the slurry at a time. Once done, transfer it to a plate and let it cool.

Once the mixture is fully cool, start making the spring rolls. Take a spring roll wrapper and place it on your working surface with the corner pointing towards you. Place a spoonful of the filling in the bottom corner and start rolling it up, tucking the outer edges in as you go. Repeat these steps until you finish the filling. After this, deep fry the spring rolls for about two to three minutes or until golden brown. Serve with your favorite dipping sauce.
