Preheat your oven to 375 degrees F. Cook your pasta according to its packaging instructions; in the meantime, prep the sauce and veggies. Heat 1 tbsp of olive oil in a large pan over medium heat. To that, add the chopped red onion, chopped red and yellow bell peppers, chopped zucchini, minced garlic, 1 tbsp tomato puree, a pinch of salt and pepper, 1/2 tsp dried oregano, and 1/2 tsp dried thyme. Stir everything and cook for two to three minutes.
Next, stir in two (14 oz) cans of chopped tomatoes and 1/2 cup double cream. Mix and bring to a gentle simmer. Once bubbling, add the drained pasta to the pan and 3 packed cups of fresh baby spinach. Mix everything together, then transfer to a casserole dish. Add 1 packed cup of strong cheddar cheese over the top along with 1 packed cup of mozzarella cheese. Place it in the oven and bake for 20 to 25 minutes or until the cheese is golden brown. Garnish with some freshly chopped parsley and serve.
