Place the sweet potatoes in a pot filled with water and let it cook with the lid on. Check if they are done by poking a toothpick. Once done, remove them from the pot and let them cool down for a bit. Peel the skin off of all potatoes.
Preheat the oven to 350 degrees.
Mash the potatoes and add 2 cups to a bowl.
Put some flour on your work surface and roll the crust to make it bigger for your pie pan. Once ready, grease the pan with some butter and place the crust. Cut the excess crust is too big. Place in the preheated oven and bake for 10 to 15 minutes.
Add the sugar, cinnamon, nutmeg, eggs, melted butter, and evaporated milk to the mashed potatoes. Start mixing all ingredients on a low setting with a hand mixer, then turn the speed higher and add the sugar. Pour the mixture into the crust and flatten the top.
Combine the topping ingredients in a bowl and sprinkle on top of the pie.
Bake for 50 to 60 minutes. Once done, let it cool down for a bit. Slice then serve. Enjoy!
