Peel the skin of the potatoes, then cut them into small chunks. Thoroughly wash them and rinse three to four times; just until the water runs clear. Put them in a pot with water then sprinkle with salt. Place the pot on the stove at high heat and wait for it to boil. Next up, bring out the bacon strips and lay them down in a baking tray covered with aluminum foil. Place in the oven at 425 degrees F until the bacon strips are nice and crispy. After this, grate the white and yellow cheddar. Chop the yellow onion and the green onions; separating the green from the white ones (the greens will be the garnish, while the whites will go to the actual casserole). In a skillet, saute the yellow onion and green onions in medium heat in the bacon fat. Season it with a good amount of all-purpose seasoning. (You can also use salt and pepper to keep it simple.) Add 1 tsp of garlic paste and mix it well. Next, chop up the bacon into bits. Set aside a small portion of bacon bits to be used for garnish.

After this, put the mixture into a casserole dish. Smoothen it out and add more shredded cheddar on top. Place the casserole in a preheated oven at 375 degrees F for about 20 minutes. After 20 minutes, pull out the casserole and let it rest for about 10 minutes. Finally, sprinkle with bacon bits and chopped green onions.
