Slice 3 blocks of cheese into three pieces then shred. Place them on three separate plates and put them inside the fridge until ready to use.
Bring a pot of water to a boil. Add a little bit of sea salt, olive oil, and the macaroni. Stir it so that it won’t stick together. Cook it until just before al dente. Remove from heat then drain.
While the macaroni is still hot put 3/4 stick of butter and stir until it’s melted. Set it aside for about 20 minutes to allow it to cool off.
Preheat the oven to 375 degrees F.
Butter the inside of your casserole dish or dutch oven. Next, pour a layer of macaroni at the bottom. Start with the mozzarella cheese, and sprinkle some of it on top. Then a layer of sharp cheddar and Monterey jack. Sprinkle a fine layer of dried basil. Then repeat the process. After that, make another layer of macaroni and mix 3 kinds of cheese on top. Lastly, add a fine layer of basil, parmesan cheese, romano cheese, and Hungarian paprika.
In a blender, combine four eggs, 3 cups of whole milk, 3 teaspoons of sea salt, and 3 teaspoons of white sugar. Blend it well then pour it into your macaroni slowly in the center.
Place in the preheated oven for 30 minutes. Remove the lid and place it back in the oven for 30 minutes. After 20 minutes has passed, take a look at it as you don’t want to scorch the top. If the top starts to get brown before the end of the 30 minutes put the lid back on. Let it rest for a few minutes before serving.
