As a kid, I did not really appreciate healthy dishes. Now, as I realize that healthy dishes can be made enjoyable and appetizing, I hunt for these kinds of dishes and learn to meal prep for a much more sufficient day.
This 2-ingredient meal prepped salsa chicken is an easy way to make taco night more fun. A low-carb dish that makes a fantastic lunch or dinner meal. MOMables – Laura Fuentes shares this slow cooker salsa chicken recipe that is incredible for meal prep and serves perfectly as tacos, in quesadillas, or as a burrito bowl. A cauliflower rice bowl, burrito-style, topped with chicken, guac, and sour cream. She even included extra ingredients to make it more fun and appetizing.

Prepare all the needed ingredients and measure as stated in the list above.
Place the 1-pound chicken and 1 ½ cup salsa in the slow cooker. Cook for 4 hours on high heat or 6 hours on low.
Once ready, shred between two forks prior to serving.
Heat oil in a large skillet over medium-high heat. Then, add the 4 cups of riced cauliflower and sauté for 5 minutes until the cauliflower is heated through and tender.
Once ready, add in 1 cup of chopped cilantro. Stir to combine and turn off the heat.
Assemble the dish by placing the cauliflower rice in the serving bowls as the base. Then, top it with the shredded salsa chicken.
For a more delicious result, add 1 cup of shredded cheddar cheese, 4 ounces of guacamole, 4 ounces of sliced black olives, sour cream, and additional cilantro.
Serve and share with your family and friends. This recipe is best enjoyed with other people. But you can also pack it for lunch at work.
