Preheat your oven to 350 degrees F then lightly grease your 9×13″ casserole dish with oil. Next, prepare your veggies. Dice one medium onion, peel and grate one large carrot, and mince four garlic cloves. Rinse the rice also at this point. After this, add 1 tbsp of olive oil to a pan over medium-high heat. Once it’s heated enough, add the diced onion and stir it for three to four minutes. Add the minced garlic and season with 2 tbsp of ground turmeric, 1 tsp of ground ginger, 1 tsp of kosher salt, 1/2 tsp of black pepper, and 1/2 tsp of ground cumin. Stir all together for about 30 seconds.

Then, pour 1 can of full-fat coconut milk. Mix everything well. Next, take your onion mixture over to your prepared casserole dish and pour it in. Add 3/4 cup of water along with the fresh lime juice, rinsed rice, and grated carrot. Gently stir together to combine. Add four boneless skinless chicken breasts to the casserole side by side. Use tongs to flip the chicken breast to coat the other side. Cover the dish with aluminum foil, then place it in the preheated oven and bake for 45 to 50 minutes. After 50 minutes, remove the casserole from the oven, sprinkle the chicken with some salt and freshly ground black pepper, then garnish with some freshly chopped cilantro.
