I tried Todd’s bacon fried corn last week at a friend’s house, and it was absolutely incredible. The flavors are bursting in your mouth! No wonder why it’s famous. This recipe by Blackstone Griddles deserves an award. It’s very simple to make and perfect for weekends with the whole family. Make sure you grab your favorite ice-cold drink when you serve this. Ingredients

  • bacon cut into small pieces
  • fresh or frozen corn kernels
  • garlic paste or minced garlic
  • oil
  • tequila lime seasoning (or any southwestern or tex-mex seasoning with cumin and red chili)
  • freshly chopped cilantro
  • Cheetos (to add some crunch, you can use flamin’ hot Cheetos or cheddar jalapeno cheese Cheetos)
  • small lime wedges
  • grated cheese
  • Mexicana crema
  • chili garlic sauce

Instructions

Step 1:

Cook your bacon pieces on your grill and cook until crispy. Do not remove bacon grease. Add the corn kernels to the grill and mix with the bacon. Cook over high heat.

Step 2:

Season the bacon and corn with the tequila lime seasoning and mix well. Next, add oil to your girl, then add the garlic paste or minced garlic. Cook until fragrant, then mix with all the other ingredients.

Step 3:

Make a taste test and adjust seasonings if needed. Be careful as it can be really hot. Add the freshly chopped cilantro and mix until well combined. Once done cooking, transfer to a large bowl.

Step 4:

Divide into bowls or plastic cups. Add the Cheetos, grated cheese, and lime wedges into individual bowls. Lastly, drizzle some Mexicana crema and chili garlic sauce on top. Serve and enjoy while warm!
