In a bowl with the chopped chicken breasts, add 1/4 tsp white pepper, 1 tbsp soy sauce, and 2 tsp baking soda. Mix well and marinate the chicken for 15 minutes. Next, in a pot of boiling water, add some salt and submerge the chow mein noodles until they are soft. After this, place them in a bowl with iced water. Drain them and set them aside. Next, in another bowl, combine 2 tbsp of oyster sauce, 2 tbsp dark soy sauce, 1 & 1/2 tsp rice vinegar, 1 & 1/2 tsp of sugar, and 1 tbsp of sambal. Mix well then add 1 & 1/2 tsp of sesame oil. Next, prepare the vegetables by chopping them. (You can chop them in whatever shape you like but you can always refer to the ingredients above for the cut used in this recipe.)

Preheat a wok (or a big pan if you don’t have one) over medium-high to high heat. Add a good amount of cooking oil and dump the marinated chicken breasts. After the chicken is cooked, remove it from the wok and add oil again. Add the chopped celery and carrots and stir fry them for about 20 seconds, then remove from the pan. Add the cabbage next and just do a quick saute, then remove it from the pan. In the same wok, add 1/3 cup to 1/2 cup of cooking oil. Add the whites of the scallions, 2 tsp of finely minced fresh ginger, and handfuls of the noodles. Next, create a space in the center and add the chopped garlic and saute for a good minute. Mix the noodles a bit, then create space again in the center and add the chicken. Mix slightly, then add the sauce. Mix well to combine the sauce. After this, you can add the veggies and the greens of the scallions. Toss them well for another 30 seconds then it’s good to go.
