Ingredients:

  • 1 box of jumbo shells
  • 1 – 2 tbsp butter
  • 1 lb ground beef
  • 3 tbsp taco seasoning
  • 1 jar of salsa (divided)
  • 1/2 can of corn
  • 1 cup shredded Mexican blend cheese (divided)
  • 5 – 6 green onions, sliced

Directions:

Step 1

Preheat your oven to 350 degrees F and cook the jumbo shells according to the package instructions. Once done, rinse the shells under cool water and set aside. Next, heat a large pan over medium-high heat, add the ground beef, and cook it until brown. Add the sliced onion and continue to cook until softened. Once the ground beef has browned up, remove the excess grease, then add 3 tbsp taco seasoning, 2/3 of a jar of salsa, and 1/2 can of corn. Mix well until combined. After this, add 1/2 cup shredded Mexican blend cheese and turn off the stove. Mix it all together until the cheese melts. (Taste test and season as you like.)

Step 2

Now, start assembling the casserole. Put half of the remaining salsa on the bottom of a 9 x 13 casserole dish, then divide the ground beef mixture on each pasta shell. Once done, layer them on the casserole dish. After this, drizzle the remaining salsa on top of the pasta shells, then sprinkle 1/2 cup shredded Mexican blend cheese. Place them in the preheated 350 degrees F oven and bake for 15 to 20 minutes. After baking, garnish with some sliced green onions. Serve and enjoy!
